In the green, warm province of Chanthaburi in eastern Thailand, where fruit gardens intertwine with agroforestry systems, one of the most interesting cacao varieties in Southeast Asia grows. Small family farms here grow the Chumphon 1 hybrid variety – a trinitario genetic that acquires an exceptional aromatic profile in this area. The ripe pods are harvested by hand, the beans are then fermented for about six days in wooden boxes and then slowly dried in the sun or on raised drying beds. This honest process guarantees the purity, consistency, and distinctive flavor structure of the cocoa.
The Chanthaburi ecosystem is naturally rich—cocoa grows among mango, banana, coconut, and spice plants. Agroforestry cultivation gives the beans their unique terroir: a fresh, fruity, tropical sparkle that is characteristic of this region.
